Trans-fatty acids, which are made from heart-healthy vegetable oils, are made unhealthy through a cooking process called hydrogenation. This appears as "partially hydrogenated oil" on food labels. Hundreds of manufacturers use this process to give their products more texture and a richer, more appealing taste. Foods containing these unhealthy trans-fatty acids raise bad cholesterol levels and should be avoided or eaten sparingly.
