I purchased this book to assist my mother. She is in the early stages of renal failure. The techniques are very easy to follow, and thanks to the techniques, along with following a low potassium diet, her renal stats have improved. Highly recommend !

I give this book 4 stars so far. My mom was hospitalized 2 weeks ago with kidney failure and must reduce her potassium. The book arrived today, and I was able to tell her how to take most of the K out of potatoes (86-95% reduction depending on type), which she has been missing mightily.

The main demineralization method is to slice foods thinly, soak, discard water, cook the food, discard the water. We will have to see how it does (in flavor) for things like cheese (soak cheese in water?) But it's sure worth a try if it lets her eat food she loves and gives her back some flavor.

It may also be a useful book for relatives of kidney patients, in whom kidney disease is underdiagnosed.

When excess food minerals must be reduced, this book shows you how to do it without reducing portion size.

This book should be the Number One book for all dialysis dietitians and nutritional professionals who are dealing with people who need to control potassium, phosphorus, or sodium in their diet.
