Product Description
A pioneer in gluten-free cooking, Roben Ryberg has worked with gluten-free flours for over 15 years. Now, in You Won’t Believe It’s Gluten-Free!, she vastly simplifies the challenges of this special diet-while perfecting the flavor of everyone’s favorite foods. Completely comprehensive, You Won’t Believe It’s Gluten-Free! offers 500 recipes for all kinds of breads and baked goods, plus easy appetizers, soups, entrees, and salads to win over any crowd. It also features desserts for special occasions-even wedding cakes! Unlike the standard use of three or more flour blends, these recipes often call for just one flour, and many recipes include corn, potato, rice, and oat flour variations. This is an essential cooking bible for anyone with celiac disease, wheat allergy, IBS, or other gluten sensitivities.

My Copy Is Already Well Worn... November 10, 2008 S. Boswell (College Station, TX) Because I use it so much. This is a great book and I highly recommend it to anyone starting out on the gluten-free diet. These quick and easy recipes are great for those of us who cannot afford to spend long hours in the kitchen just to get a homemade meal at night. This is a great buy for anyone with kids or young adults who are still learning about cooking. Roben did a great job with this book!
I'd rather eat gluten October 28, 2008 Meredith J. Begin (Washington, DC) 1 out of 4 found this review helpful
I feel so bad for the people that gave this book a good review. Those poor souls must be eating the worst food ever and must be miserable with their GF diets. Not only are the recipes awful but the author isn't even gluten intolerant and would probably never eat these dishes even if she was paid to. She knocks very quality, highly nutritious grains like quinoa and teff while telling people that it is okay to eat oats. People with gluten intolerance should be warned that oats are not gluten-free unless certified. The cross-contamination of oats with other glutinous grains are something to watch out for. I was really excited at first to see a chapter on pasta dishes until I discovered that the author instructs the cook to go out and purchase gluten free pasta!! I mean, what kind of GF book is this? A good GF book would teach me how to make GF pasta from scratch. And every "from scratch" recipe in this book I tried turned out to be a runny, oily mess or tough and hard to chew or crunchy and crumbly. It seems as though these recipes were never even tested. And it is obvious that the author hasn't done any research on gluten-free baking or food science. She doesn't seem to understand that in order to have great results, you MUST COMBINE A VARIETY OF DIFFERENT GLUTEN-FREE GRAINS!!! This book is so awful that I'd rather be sick from eating gluten than to eat anything that comes out of the gluten-free recipes. If anyone wants to eat some truly delicious gluten-free baking and cooking, please find any of Bette Hagman's 6 Gluten-Free Gourmet books. I only have Living Well Without Wheat but EVERYTHING that I've made from it has knocked the socks off of all my gluten loving friends. Now THOSE recipes are certainly sure to inspire.

I have made quite a few recipes of this book, and all were very very good, even if there're quite simple and easy to make. I highly recommend it.
Simpler (and CHEAPER) Gluten-Free Eating October 26, 2008 Cecily G (Overland Park, KS) 1 out of 1 found this review helpful
I'm thrilled to have finally found recipes that don't require lots of special flours and extra steps, yet yield delicious results. I made the corn-based banana bread this week, and it was as good as any I've ever tasted. In fact, when my mom stopped by and tried some, she wanted the recipe. (And she can eat gluten!) The hamburger rolls turned out great, too. One batch made 8 rolls, (using cornmeal and cornstarch.) That recipe alone will save us a small fortune, as I have been buying the pricey frozen ones at the health food store.
You Won't Believe It's Gluten-Free! October 21, 2008 C. Patterson 1 out of 1 found this review helpful
This is by far the best gluten free cookbook I have purchased! I have enjoyed cooking and have had food that I haven't had in over 1 1/2 years! You only need 1-2 flours, you don't have to make a special mix of 3-4 flours and when you live in a small town where you can't purchase what you need that's very important. The recipes are easy to follow and make and taste a lot like glutinous food, as far as I remember. I have had more positive results with the recipes in this cookbook than any other cookbook I have tried. She provides recipes that are nutritious. I would definately recommend this cookbook, especially to recently diagnosed celiacs.
